Chef Felipe Castañeda owns two Mexican restaurants in Palm Springs—this one, part of the Los Arboles Hotel, is outside on a charming patio set amid flower gardens and shaded by red umbrellas. Castañeda prepares classic combinations of tacos, tamales, and enchiladas, along with specialties such as double-cooked pork and pollo en pipián (chicken with a pre-Columbian sauce made of ground roasted pumpkin seeds and dry chilies). Vegetarian offerings include delicate
spinach enchiladas and a fine chile relleno. Castañeda's more casual café, also called El Mirasol, is 2 miles south at 140 East Palm Canyon Drive.
