The focus at Deerfield is on producing "clean wines"—ones low in histamines and sulfites—the better to eliminate the headaches and allergic reactions some red-wine drinkers experience. Winemaker Robert Rex accomplishes this goal with no loss of flavor or complexity. Deerfield wines are bold and fruit-forward, with a long finish. The lush DRX and Meritage Bordeaux-style red blends invite contemplation about the vineyards, weather, and wine-making skills involved in their creation. To sip these and other wines, including a finely tuned blend of four white grapes, you walk deep into a 23,000-square-foot cave for a seated tasting in a relaxed, loungelike space. Standard tastings ($15) include five wines; for an additional $5, you can sample more, including at least one older, library wine.
