The flagship Carneros Chardonnay—a crisp and classic rendition of the white wine this region does best—is the star at Cuvaison (pronounced coo-vay-ZON), which also makes Sauvignon Blanc, Pinot Noir, Syrah, Cabernet Sauvignon, and Zinfandel. Taste them all in the slick, modern tasting room constructed from inventively recycled materials. Some of the wine can be purchased only at the winery, or sometimes online; the fruit-forward yet smooth estate Pinot Noirs and excellent Zinfandels often sell out. All tastings are sit-down style, either indoors or, in good weather, on an outdoor patio whose lounge chairs and vineyard views encourage you to take the time to savor the wines. You must make an appointment to visit, but even on the shortest of notice you can usually get in.
