Sophisticated wines come from Round Pond, but the estate also produces premium olive oils, most from olives grown and crushed on the property. Informative olive-related seminars begin with a look at some trees and a tour of the high-tech mill, followed by tastings of the aromatic oils, both alone and with house-made red-wine vinegars. You'll also sip wines, but for a full tasting, head across the street to the winery. The basic tasting includes a suave Sauvignon Blanc
and Round Pond's supple, well-rounded reds. The flagship Estate Cabernet Sauvignon has the structure and heft of the classic 1970s Rutherford Cabs, but gracefully acknowledges 21st-century palates with smoother, if still sturdy, tannins. The Estate Tasting ($45) pairs small morsels with the wines.
