What began as the Carmel Valley Country Club—a hangout for Frank Sinatra, among others—is now a semiprivate golf club and resort in the valley's west side. Winding around swimming pools and putting greens, the buildings' exteriors recall the old days, but indoors the luxury is totally updated with a cool, modern feel: plasma TVs swing out from the walls, the toiletries include giant tea bags to infuse your bath with herbs, and each room has a window seat overlooking a private patio. The Covey at Quail Lodge ($$$-$$$$; jacket recommended) serves contemporary California cuisine in a romantic lakeside dining room. Pros: On the golf course, on-site Land Rover Driving School, pastoral views. Cons: Some rooms need updating, 5 mi from the beach and Carmel Valley Village.
