Chef Josef Centeno, previously at Lazy Ox Canteen, originally came up with the baco, a flatbread sandwich, as a late-night snack for friends. The once off-menu, carnitas-stuffed dish now steals the spotlight at this brilliant Downtown newcomer; so does the mint and basil-dusted okra, cocä flatbread pizza topped with mushrooms and fontina, and housemade orange-juniper soda pop. Centeno recently opened a second spot, Bar Ama, also in Downtown.
