Rick Bayless's Los Angeles venture was met with a tinge of cynicism upon its arrival, but with a luxurious resort setting, fun tequila lounge, loveseat swings by the main bar, and a menu that blends classic Mexican food with innovative ingredients, it's clear Red O has won over the hearts and palates of everyone in town. Scoring a seat at Red O—a celebrity hotbed often milling with young Hollywood types—makes you privvy to some of the best people watching in town. Pull up a white wicker chair and start your evening with a margarita made with serrano pepper-infused syrup, and ask for the yellowtail ceviche that comes with homemade tortilla chips. Small-plate offerings allow for sampling: try the soft tacos made with braised short rib, and Sonoma County lamb Colorado dish. The fresh corn and goat cheese tamales are a tasty rendition of a Mexican classic and the shrimp empanaditas seal the deal.
