If you're craving a perfect Provençal meal, turn to chef Jean-Pierre Bosc's menu. There's salade Lyonnaise, served with a poached egg, probably L.A.'s best bouillabaisse, and fillet of sole au pistou (with basil-garlic paste). The atmosphere is that of a classic bistro -- balanced against a hint of elegance -- with mustard walls, cozy banquettes, and jars of cornichons and olives delivered to every table on arrival.
