Chef-owner Michael Cimarusti has elevated Providence to the ranks of America's finest seafood restaurants. Co-owner Donato Poto smoothly oversees the elegant dining room, which is outfitted with subtle nautical accents. Obsessed with quality and freshness, the meticulous Cimarusti maintains a network of specialty purveyors, some of whom tip him off to their catches before they even hit the dock. This exquisite seafood then receives the chef's application of French technique, traditional American themes, and Asian accents in dishes on elaborate tasting menus. On Friday, Providence serves à la carte items; the rest of the week, delight in the chef's whims. Pastry chef David Rodriguez's exquisite desserts are not to be missed. For a splurge, consider the six-course dessert tasting menu.
