The prolific chef-restaurateur's surprisingly modest-looking place draws celebrities and serious sushi buffs alike. Reflecting his past stint in Peru, Matsuhisa incorporates intriguing Latin ingredients into traditional Japanese cuisine. Here you can encounter such dishes as the Chilean sea bass with foie gras, scallop sashimi with black garlic sauce and kiwi, or kampachi served with agua de chili. Daring diners should ask for the omakase, a seven-course chef selected menu for an amazing culinary experience (with a tab to match).
