Robert Sinskey Vineyards makes well-regarded chardonnay, cabernet, and merlot, but is best known for its intense, brambly pinot noir. The influence of Robert's wife, Maria Helm Sinskey—a chef and cookbook author—is evident at the back of the dramatic, high-ceiling tasting room, where there's an open kitchen for occasional cooking classes and demos. (Call ahead for a schedule.) Tours of the cave and cellar wind up with a flight of wines, but for the best sense of how Sinskey wines pair with food, reserve a spot on the culinary tour, which includes a wine and cheese pairing.
