The majestic château of Domaine Carneros looks for all the world like it belongs in France, and in fact it does: it's modeled after Champagne Taittinger's Château de la Marquetterie, an 18th-century castle near Epernay, France. Carved into the hillside beneath the winery, Domaine Carneros's cellars produce dry, delicate sparkling wines reminiscent of those made by Taittinger and use only grapes grown locally in the Carneros wine district. Flights of wines and accompanying cheese plates and caviar can be ordered from tables inside the Louis XV-inspired salon or, better yet, on the terrace overlooking the vineyards.
