Generations of Arizona schoolchildren have learned the state's four Cs: copper, cattle, cotton, and climate. Today, a good argument could be made for adding a fifth in Phoenix: cuisine. New restaurants have proliferated in the Phoenix metropolitan area due to the Valley's rapid growth and the influence of adventurous chefs who have emigrated here. An influx of Thai, Peruvian, Vietnamese, and Japanese restaurants have created a culinary scene of sophistication and diversity. Contemporary menus feature touches of the creator's homeland or ethnicity mixed with local recipes and ingredients. Pacific Rim or Latino foods are fused with spices native to the Southwest, such as Mexican coriander, fragrant Mexican oregano, canela sticks (Mexican cinnamon), and, of course, chiles from mild to explosive. Italian, Spanish, and even French favorites served in Phoenix might have more "bite" than elsewhere. More »
