The bi-level signature restaurant at the Lake Powell Resort occupies a cavernous round room affording 270-degree views of the lake, surrounding vermilion cliffs, and massive Navajo Mountain in the distance. Serving the best food in the region, the kitchen focuses on organic, healthful ingredients in producing such toothsome dishes as a serrano-citrus-brinded pork porterhouse with apple-chipotle gastrique, pan-wilted spinach, mashed potatoes, and salsa verde; and ancho-honey-glazed salmon with spicy black-bean sauce, charred-jalapeño crema, and roasted sweet potatoes. There's a lavish breakfast buffet in the mornings. When Rainbow Room is closed in winter, you can still dine at the casual Driftwood Lounge restaurant.
