Hidekazu Tojo is a sushi-making legend in Vancouver, with thousands of special preparations stored in his creative mind. Though the restaurant relocated to a striking modern space in an open high-ceilinged room, complete with a separate sake lounge, Tojo's sushi bar remains a convivial ringside seat for watching the creation of edible art. The best way to experience Tojo's creativity is to reserve a spot at the sushi bar and order omakase (chef's choice); chef Tojo will keep offering you wildly more adventurous fare, both raw and cooked, until you cry uncle. Budget a minimum of C$50 per person (before drinks) for the omakase option; tabs topping C$100 per person are routine.
