Crepes: A Movable Feast

Crêpes—those delectable, paper-thin pancakes made of flour, eggs, and milk or cream—can be found on menus everywhere. But in Québec City, you can order a crêpe in French and know that what you're holding has been part of French gastronomy for centuries.

You'll want to plan your crêpe tour carefully. These little folded up packages of sweet or savory goodness are quite rich, and so it's not advisable to mix crêpes in the same meal. Your first crêpe of the day can be from the commercial but still yummy Chez Cora (545 rue de l'Église, St-Roch. 418/524-3232) , which stays open until 3 PM, so sleep in late and make it brunch. After three hours or so, you'll be ready for a salad and a decadent fruit or ice cream-filled crêpe for dessert at Casse-Crêpe Breton (1136 rue St-Jean, Upper Town. 418/692-0438). Expect to wait in line—even the locals do! Skip the funicular and hit those steps while sightseeing to speed your digestions before heading to Au Petit Coin Breton (1029 St-Jean, Upper Town. 418/694-0758). Here, you'll find more traditional gourmet crêpes, filled with seafood, wild boar, ham, or asparagus with béchamel sauce.

Take a deep breath—but not too deep—as you reminisce about all the wonderful crêpes you encountered today. Hemingway would be proud.
