URSA is modern Canadian cuisine and molecular gastronomy under one roof. But surprisingly, it's also health-conscious; in fact URSA takes pride in creating delicious, healthy dishes that break the mold of "diet" food. Case in point, the burrata salad with grilled apricot, wild foraged leaves, blossoms, and currants—a bounty of seasonal local ingredients and a riot of color. Another example, the lamb zaatar with a rye berry purée, asparagus, and béarnaise boasts rich flavors with healthy sides. And if you worry dessert will disappoint, end the meal with a deconstructed lemon meringue pie with yuzu lemon curd, blueberry preserves, spruce caramel, and duck fat sable.
