Chef Marc Thuet has opened his own temple of gastronomy showcasing not only his love of foie gras and bone marrow, but also his deft hand with bread. His artisanal loaves are now sold here and at better retailers across the city. Steak or salmon tartare are done up in clever ways while beef bourguignonne with mashed potatoes and mushrooms is the French countryside on a plate. Cassoulet with duck and beans, and saddle of lamb with thyme-flavored sauce have upscale stick-to-your-ribs appeal. Sunday brunch is a pleasure, with the flakiest of pastries and eggs poached in wine sauce. Atelier Thuet, the chef's new take-out lunch spot in the burgeoning Liberty Village, also features his big, beefy flavors, signature loaves, and treats for trusty Rover, including artisanal dog biscuits with a foie gras reduction glaze!
