Additional options draw from the bounty of nearby wine and food producers and may include such dishes as Perth County pork tenderloin stuffed with caramelized apple and chèvre from C'est Bon Cheese (in St. Mary's) or pan-seared elk with a red-wine jus and blue-potato hash.
