The trendy restaurant in the hotel of the same name makes organic synonymous with simple, tasty, and fresh. The menu specials include whatever is best at the market or from local farmers, fishermen, and other suppliers, and the herbs and vegetables are homegrown. A hint of strawberry and maple enlivens the foie gras; the flavors of potato-bacon pavé, rapini, blue cheese, and partridgeberry jus lend the elk medallion a soupçon of sophistication; and lobster might find itself jazzed up with goat cheese, scallion, truffle oil, and asparagus. The extensive wine list includes vintages from around the world. Soups, salads, sandwiches, and flatbreads are the lunch-menu staples, along with a few mains, such as pan-seared salmon and steak frites.
