From the frequently changing, locally sourced menu, you could choose starters like grass-fed beef carpaccio, giant Pacific octopus, or perhaps pea soup with cauliflower and an "egg" made from cheddar and carrot. Mains might include chicken with cheddar pierogies, butter radish and cabbage shoots, short-rib steak from a local organic farm, or coho salmon with birch syrup.
