Fairmont Waterfront Review

This luxuriously modern 23-story hotel is across the street from the Convention and Exhibition Centre and the Canada Place cruise-ship terminal, but it's the floor-to-ceiling windows with ocean, park, and mountain views in most guest rooms that really make this hotel special. Adorned with blond-wood furniture and contemporary Canadian artwork, each room also has a window that opens. Elevator waits can be frustrating so consider asking for a room on a lower floor, though you'll be sacrificing a view for this minor convenience. Next to the mountain-view pool is a rooftop herb garden—an aromatic retreat open to guests that includes a number of beehives, which are harvested on Friday afternoons (the honey is used in ganache truffles and honey-basil cocktails). The hotel's canine ambassador, Holly, is usually available for petting, pampering, and taking for strolls.
