Contemporary regional cuisine is the theme at this chic restaurant, one of the city's most splurge-worthy dining rooms. Among executive chef Quang Dang's creations are butter-poached lobster and potato gnocchi in a thyme emulsion, Haida Gwaii sablefish in a three-vinegar glaze, and venison roasted in brown butter and served with an arugula bread salad. If you can't decide, opt for one of the elaborate multicourse tasting menus (C$68–C$95), which include vegetarian, seafood, and meat options. The decadent desserts might include a chocolate-caramel ice-cream cake with salty-sweet almonds or a blueberry crepe filled with lemon pound cake and topped with apricot-elderflower sorbet. Marble floors, high ceilings, and a wall of wine make the space feel simultaneously energetic and cozy.
