Voted "Best New Restaurant in the Canadian Rockies" by Where Magazine in 2005, Fuze has been a welcome addition to the Banff dining scene. The chic and modern dining room is set between a wall of display wines and a bar built from wood salvaged from a grain elevator. There is a demonstration kitchen for wine tastings and corporate cooking events, an epicurean boutique to purchase spices and cooking supplies, and a chef's table with dramatic views of the kitchen. Entrées are artfully displayed and signature dishes include such items as roasted tomato soup with double smoked bacon, fruity cream, and pesto oil or herb crusted rack of lamb with tapenade lamb jus. You can't go wrong with the three-course table d'hote menu for $60 per person. There is also an oyster bar and seafood lounge. A Sunday brunch menu is served from 10:30 AM until 2:00 PM on Sundays.
