André Rochat, who brought Vegas his two other outstanding restaurants, opened this considerably more contemporary and sleek space atop the cool Palms Hotel. You may not even notice the priceless china, crystal, and silver in the elegant dining room, given its unbeatable views of the Vegas skyline. But you may just become distracted once you sample the artful contemporary French fare. Such complex dishes as seared diver scallops with bacon confit, black truffles, sunny-side-up quail eggs, and caviar demonstrate the kitchen's estimable skills. Pepper-crusted filet mignon with a cognac cream sauce makes for one of the better main courses. Finish your meal with a cognac from one of the world's finest collections.
