Even among celebrity chefs, Jean-Georges Vongerichten has established a "can't touch this" reputation. Prime -- with its gorgeous view of the fountains -- has become a place to see and be seen at Bellagio. In a velvet-draped gold, burgundy, and blue room that recalls a Prohibition-era speakeasy, choice cuts of beef are presented with mustards and sauces, from the classic Béarnaise to the more adventurous kumquat-pineapple chutney. You can also try signature Vongerichten dishes, such as crab spring rolls with tamarind sauce and tuna au poivre with wasabi mashed potatoes and steamed bok choy. Men are asked, but not required, to wear jackets.
