Cloistered away from the busier parts of the Wynn, this restaurant overlooks a serene pool and garden off the gleaming Tower Suites lobby. Tableau serves three anything-but-square meals a day. A highlight is the fabulous brunch, where you might try Maine lobster salad with baby beets and winter citrus, or huckleberry-ricotta pancakes. The Dungeness crab club sandwich with smoked bacon makes a memorable lunch option, while at dinner you can feast on pancetta-wrapped monkfish with horseradish-whipped potatoes, or roasted Colorado rack of lamb with chestnut flan, lamb sausage, and potato gratin. Tableau also offers an extraordinary vegetarian tasting menu, which might feature ricotta ravioli with black truffle-and-fennel sauce, or caramelized onion-and-feta tart with watercress salad.
