George Mavrothalassitis, who took two hotel restaurants to the top of the ranks before founding this James Beard Award-winning dinner house, admits he's "crazy." Crazy because of the care he takes to draw out the truest and most concentrated flavors, to track down the freshest fish, to create one-of-a-kind wine pairings that might strike others as mad. But for this passionate Provençal transplant, there's no other way. The menu changes quarterly, every dish (including dessert) matched with a select wine. We recommend the multi-course tasting menus (beginning at $66 for four courses without wine, up to $137 for six courses with wine). Etched-glass windows screen the busy streetcorner scene and all within is mellow and serene with starched white tablecloths, fresh flowers, wood floors, and contemporary island art.

Excellent - the best restaurant Oahu but...

...if you're looking for bold, large portioned, comfort style food - don't come here. Chef Mavro is definately not to everyone's ideal of what an expensive restaurent meal should be and it wouldn't be for everyday eating but for a treat or those who appreciate exciting and innovative matches of flavours, it does not get better than this. The only way to go, is the set menu with wine pairing, you don't have to stick to the menus though and can add/omit or change from other menu's for each course. The wine pairings are often sublime with wine's I would never usually try, going incredibly well with the unusally flavoured plates. Everything on each plate is meticulously thought out and planned. Each flavour chosen for not only how it goes with section of the plate it's on - but with the overall plate. I'm not a desert fan usually but the deserts here are outstanding, with a Chocolate mousse infused with rosemary (!?!) standing out and a licourice flavoured icecream with a compote and black salt being another winner.
Not every dish on the meal will stand out as exceptional - but it's objective, what works for one person may not work as well for another - what does stand out though, is at the finale of the meal, you've been through a two hour+ experience, an event and for us, something which leaves us satiated for a long time.

This food is too good to be true. From beginning to end, from the time you walk in the door, everything is perfect. The 5-course dinner is spectacular. Each course is perfectly proportioned and perfectly timed. It doesn't get any better.

Not highly recommended. Menus were not available when we were seated. So, we asked for the wine list. Response was, "sorry sir, we do not have a wine list". At this point, my guest and I were looking at each other and asking ourselves "what are we doing here". For two people that frequent many restaurants around the globe we thought this was quite an experience. Once, we received the menus and ordered it was enjoyable meal.
