Fodor's Review:
Sam Choy has been called the Paul Prudhomme of Hawai'i and aptly so: Both are big, welcoming men with magic in their hands and a folksy background in small, rural towns. Choy grew up cooking for his parents' lu'au business and now has an empire: restaurants, TV show, cookbooks, commercial products, and his two best chef-friends are Prudhomme and Emeril LaGasse. Here, Choy and staff interpret local favorites in sophisticated ways, and the fresh fish is the best. The portions, like Sam's smile, are huge.
