You'd think The Bistro had occupied this dim labyrinth of plush spaces for decades, but it opened just a few years ago with the express purpose of bringing back dignified dining: steak Diane and duck à l'orange, tuxedoed waiters, cushy banquettes, a pianist who can perform any request, and bottomless martinis. It was an immediate success and remains so.
