Though not a native son, chef-proprietor Pascal Oudin has been cooking around Miami since the 1980s, when he opened Dominique's in the Alexander Hotel. His streamlined French cuisine disdains trends and discounts flash. Instead, you're supplied with substantive delicacies such as sautéed sea bass wrapped in a crispy potato crust with braised leeks, veal rib eye au jus, and tenderloin of beef sautéed with snails and wild mushrooms. Service is proper, textures are perfect, and wines ideally complementary. The only dilemma is deciding between Oudin's tarte tatin (apple tart), Miami's only perfect soufflé, and a cheese course for dessert.
