The newest sensation at the new Naples Grande Resort breaks all the rules with a chic wall-less lobby setting and a short menu of multidimensional and artistically plated creations. A tuna sashimi appetizer, for instance, comes with a soy-ginger tuna tartare, a shot of pureed cucumber spiked with champagne and grenadine, and the suggestion of a lime vodka and chili-pepper-water martini. Main plates include sugarcane "lacquered" halibut, strip steak with truffle Parmesan fries, and Dijon-panko crusted rack of lamb. Save room for the innovative dessert shooters. Breakfast and lunch menus are equally bold.
