The Ritz-Carlton's dining room is one of the brightest restaurant stars in metro D.C. In the state-of-the-art open kitchen, chef Fabio Trabocchi emphasizes both traditional Italian cooking and his creative takes on the classics. The menu changes often, but you might find potato ravioli in black-truffle sauce, sea bass with fennel confit, and grappa risotto. Desserts might be bonbons filled with rose, lavender, and peach ice cream or a chocolate délice (chocolate custard wrapped in a chocolate turban). Three-, five-, and seven-course menus range from $85 to $155 depending on the day of the week.

Chef Fabbio left over 18 months ago for NYC and the restuarant is going out of business (if not already) to be replaced by another concept.
Why is this still here on Fodors...
