Mille Fleurs is a winner, from its location in the heart of wealthy, horsey Rancho Santa Fe to the warm Gallic welcome extended by proprietor Bertrand Hug and the talents of chef Martin Woesle. The quiet dining rooms are decorated like a French villa. Menus are written daily to reflect the market and Woesle's mood, but might feature a creamless soup of field greens, salad of Maine lobster (with avocado, mango, and lemon dressing), oven-roasted quail with braised cabbage, stuffed John Dory, or wiener schnitzel of grain-fed veal.
