This head-turning venue of San Francisco's An family is an otherworldly reproduction of colonial Vietnam. Exotic fish swim in a floor-to-ceiling aquarium and through a glass-topped "river," sunk into the marble floor, which meanders toward the bar. The French-influenced Southeast Asian menu might include lemongrass-scented bouillabaisse or salmon in a ginger emulsion. From the "secret kitchen" (a kitchen-within-a-kitchen to which access is strictly limited to An family members, thereby protecting treasured recipes) comes colossal tiger prawns and whole Dungeness crab simmered in sake, chardonnay, and cognac.
