Churrascarias (Brazilian steak houses) are suddenly the norm in L.A. and Fogo de Chão is one of the best examples of the trend, with an elegant spin on the traditional meat fest. Start at the buffet, helping yourself to salads and sides. Back at your table, use the marker to signal for service; turn it to green and servers dressed as gauchos speed over with beautifully barbecued meats, carving them onto your plate from swordlike spits. There are about 15 different kinds of beef, chicken, lamb, and pork to try -- when you're ready to admit defeat, turn the marker to red. The dining room itself recalls a fine steak house with a hint of Vegas: white linen-topped tables, wooden wine racks, massive murals, and fountains.
