Fodor's Review

His restaurant may be the mecca of fine dining in the Yucatán, but if you ask him, Chef Roberto Solis will admit that when he started over 10 years ago, he was a pretty bad cook. So he dragged himself to Europe and New York and worked at some of the world's best restaurants, such as the Fat Duck, Noma, and Per Se, befriending and learning from the greats. Today, Néctar's mix of haute technique and Yucatecan recipes and ingredients is that standard by which all other

fine-dining establishments in the area are measured. The real star here is the six-course tasting menu, which could feature such dishes as lamb in a Yucatecan recado negro sauce or venison dzic (cold meat salad) on fried plantain chips. The prix-fixe menu costs $75 (you can also order à la carte), and reservations must be made at least a day in advance. Note that this restaurant is not centrally located, and you will probably need a car to get here.
