Favorites include the lobster roll (with cilantro, mango, mustard, and roe), lobster sambal (marinated in sake with soy, ginger, and garlic), and the tuna tostadas served on rice crackers with avocado. The seared tuna with black and white sesame seeds and spicy serranito—fresh catch laced with serrano chile pepper—also find their way on most of the tables.
