One of the few woman chefs in Los Cabos area, Margarita Carrillo de Salinas is often considered one of the top chefs in Mexico. Carrillo de Salinas taps into the quality cooking that has run in the family for generations, and her menu shows it. The restaurant's signature dish is the complex Pescado Tikin-Xic (try to pronounce this Mayan recipe correctly after a shot or two of tequila). Tikin-Xic is the local catch of the day that is prepared in the Yucatecan style, with an achiote salsa and wrapped in banana leaves. For dessert the simple grilled mangoes, filled with spices and nuts and smothered in a rich orange-juice reduction, is a delectable choice.
