One of the few female chefs in the Los Cabos area, Margarita Carrillo de Salinas is often also recognized as one of the top chefs in all of Mexico. With the first look through the Don Emiliano menu, it's immediately evident that quality cooking has run in the family for generations, and Carrillo de Salinas is tapping into that history. Perhaps the restaurant's signature dish is the complex Pescado Tikin-Xic (try and pronounce this Mayan recipe correctly after a shot or two of tequila). Tikin-Xic is the local catch of the day prepared in the Yucatecan style with an achiote salsa, and then wrapped in banana leaves. For dessert the simple grilled mangoes, filled with spices and nuts and smothered in a rich orange juice reduction, is a delectable choice.
