Dare we make such a claim? Nick San may very possibly be Cabo San Lucas's top restaurant. Owner Angel Carbajal is an artist behind the sushi counter (and also has his own fishing boats that collect fish each day). A creative fusion of Japanese and Mexican cuisines truly sets his masterpieces apart. The sauce on the cilantro sashimi is so divine that diners sneak in bread to sop up the sauce (rice isn't the same). You can run up a stiff tab ordering sushi. The mahogany bar and minimalist dining room are packed most nights, but the vibe is upbeat, and many diners eat here so frequently they've become family friends. There's also a second Nick San on the Corridor in the Tiendas de Palmilla shopping center. Reservations are recommended, especially on weekend nights and during high season. Otherwise, get ready to wait.

Overall, it was a nice experience eating at NickSan in Cabo. However there was a large hiccup that altered our enjoyment. Eight of us ate there on December 23, 2011. The atmosphere is nice, maybe a bit noisy for the soft spoken waiters that barely speak English. We had with us friends that have been all over the world many times. The consensus was that the food was good. Some even said their dish was unique. It was on the higher end of pricing in Cabo, but the thing that got the whole table upset was when we received the bill. There was a $540 peso charge for water. The waiters had offered a glass of water when we sat down. Each of us said yes, but there was no mention that this was a premium charged water. It just seemed ridiculous to pay over $40US for water when we weren't even informed that there was a cost. After a few minutes of discussion, the manager did remove the charge though it was not with a smile or any kindness. She looked at us as though we were stupid to think that a glass of water was free. We all agreed that would be our first and last visit to NickSan. The food just wasn't good enough to demand another visit.

It was a suprise to find such an delicious and imaginative Japanese Fusion experience in Cabo. The plates were spetacular, and imaginative. The combination of Japanese and Mexican flavors is a great experience.
I would even go as far as to compare the quality of its food to NOBU, which I have had in New York, London and Las Vegas.
This should be the next up and coming competitor for Nobu. Just as Nobu mixes Japanese and Peruvian cuisine, Nick San does a great job in using Mexican and Japanese cuisine.
