Most Baja California towns have appropriated their local cuisine from mainland Mexico. In many regions, the best meals are had at curbside taco stands, where grilled meat and fried fish are served atop tortillas with shredded cabbage and hot sauce. It seems that the farther south you go, the more seafood there is, from lobster tacos to fish tostadas. Eat your fill at the inexpensive (but delicious) small street stands or in the finer restaurants—either way you won't be disappointed. In recent decades, Baja has seen a slow influx of upscale restaurants and international cuisine, often centered on the region's excellent seafood and incorporating other local ingredients. Although the peninsula may still fall something short of a culinary destination, eating well no longer means only taco stands and beer.
