Along the Costanera Highway from Dominical to Punta Mala you'll see signs shouting "Ceviche," sold from carts with cooler chests or in rickety roadside ranchos. If you're interested in trying this local specialty—raw fish and seafood marinated in lime juice and spiced up with onions and red peppers—try the ceviche, safely refrigerated, at this breezy, open-air restaurant that's just steps from the sea. The ceviche is the freshest you'll find: among the various versions, the shrimp and sea bass marinated in coconut milk is a specialty. But don't stop at the ceviche: the hot dishes are well prepared, and the excellent chicken curry is a nice nonseafood option.
