Come early to catch the sunset over Flamingo Beach, then linger over a fine French-accented dinner at this elegant, torch-lit terrace restaurant perched on a hillside. Veteran chef/owner Alain Taulere hails from southwestern France, so of course there's bouillabaisse on the menu, along with escargots and Chateaubriand for two, sliced tableside. He blends French classics with tropical flavors, resulting in dishes like coconut-encrusted red snapper. The succulent lamb, a rarity in Costa Rica, is served here with a rosemary Bordelaise sauce. The new lunch menu is lighter, with tropical salads, excellent ceviche, and paella. A Sunday brunch menu, served from 10:30 AM to 2:30 PM, has omelets, quiches, and scallops au gratin. There's an extensive wine cellar to match the sophisticated menu. Service is smoothly professional.
