Low lighting, ocher walls, dark hardwood, and potted palms provide Manuel Antonio's best ambience for dinner, despite the lack of an ocean view. The name is a greeting in the indigenous Maleku language, but the menu is a cosmopolitan invention and includes such un–Costa Rican starters as lemongrass coconut soup, and "seafood cigars"—a mix of fresh tuna, shrimp, and mahimahi deep-fried in an egg-roll wrapper and served on a cabbage salad. The main courses include such Asian-inspired dishes as prawns with a tamarind-coconut-rum glaze and macadamia-encrusted mahimahi with a plum chili sauce. Be sure to order the chocolate soufflé in advance, otherwise you'll be stuck listening to the table next to you rave about its perfection.
