The most formal restaurant at the Los Sueños Resort (though dress is still Costa Rican casual) has large arched windows facing cascading water on one wall and large still-lifes of fruits on the other. As the name implies, the menu uses basic Latin American ingredients, like yucca, sweet potato, corn, and beans, in creative ways, fusing them with flavors from other parts of the world. The "Simply Fish" concept allows you to select your fish, choose the style of preparation,
and an accompaniment. The main menu includes pork chops with mint pesto, and sea bass with curry and coconut.
