Stewed iguana, known locally as bamboo chicken, is available on request here, but you can also try armadillo or brocket deer. Macy, the Jamaican-born proprietor of this five-table spot, says iguana is tough to prepare -- it has to be scalded, then washed in lime juice and vinegar -- but it's delicious to eat. Fish or chicken with rice and beans and other more traditional dishes also are served. On display is a letter from the bishop of Belize congratulating the staff on its catering feats and a photo of Harrison Ford, who commandeered the table by the door during the making of The Mosquito Coast.
