Fodor's Review:

This is the hippest restaurant and bar on the cayes. Rojo Lounge, in a sultry open-air palapa on a beautiful beach, is definitely red hot. Lunch offers a selection of sophisticated snacks like chili-dusted cold shrimp, grilled lobster salad, and conch pizza, from BZ$24 to BZ$44. Dinner is romantic and delicious, with surprising combinations such as cashew-crusted grouper stuffed with lobster (BZ$62) and guava-glaze ribs (BZ$58). The bar serves killer frozen mojitos.

My husband and I recently visited Belize on our honeymoon. We stayed at a nearby resort which from all the reviews we had read was supposed to have an excellent restaurant. After two days of emptying out our pockets at the decent but overpriced restaurant we were left unimpressed. The chef seamed to have an aversion to seasoning for some reason and we found ourselves longing for FLAVOR! Is that too much to ask for a meal you just spent over $100 on?! Sorry... veered off there... I'm very passionate about food. So one day we decided to go for a walk and just a few doors down we found this amazing looking restaurant (Rojo) but noticed they were closed. There was a sign outside saying they had gone to holly wood for a charity event but they would be back that wednesday. We decided to make sure and come back to try it. We met another couple at our resort who was also interested in trying out Rojo so they made a couple reservations for us. When we showed up the place was glowing and very inviting. Our new friends were sitting having a drink on one of the cushy sofas when we walked up. My husband and I started off with Capharenias (sp?) which were some of the best we've had. They offered I think two specials that night one was crab cakes and the other red snapper. Both were excellent. We also had a red pepper habenero hummus that was to die for (can't believe I just used that expression...). We went back for lunch and dinner the next day and tried most everything on the menu and weren't let down with any of it. The chef came out and spoke to us a few times and promised to fork over a new ingredient for the hummus each time we came back. He maintained true to his word and on our last night he practically gave up the recipe! We loved our time in Belize but honestly, I think both of us will remember eating at this restaurant above everything else we did while we were there! We like our food.
