Opened in 1999, Changa has been blazing a culinary path in Istanbul that others have only recently started to follow. The menu is overseen by award-winning, London-based chef Peter Gordon, and the innovative dishes combine flavors and ingredients from around the world, presented with aesthetic flair. Mains include tortellini stuffed with wasabi and salmon and served with a grilled porcini and creamed lemongrass sauce, and grilled beef with greens and a sweet Vietnamese sauce. The restaurant is spread out over three floors of an early-20th-century town house, and a large circular "skylight" cut into the ground floor reveals the bustling basement kitchen below.
