Urfa's old neighborhoods are filled with lovely stone homes covered with ornamental carving, and several hours exploring will be time well spent. One place worth seeking out is the old Assyrian church complex, Il Özel Idaresi Vali Kemalettin Gazezoğlu Kultur ve Sanat Merkezi—it's a mouthful, but neighborhood locals should be able to point you in the right direction—that has been restored and turned into a cultural center.
