Markus Neff presides over this gourmand's paradise, located in the Waldhotel Fletschhorn. The vibe is innovative, the flavors superb, and the dishes rotate seasonally and are heavily based on local products. Among the winners: seafood soup with saffron, panfried duck liver with caramelized red beets, or roasted Alpine lamb chops with rye-bread crust and creamy potato gratin. Lunch is a great time to sample the gourmet team's talents at a more favorable price: they serve straight through from 11:30 to 5:30, and there are mains starting at 25 SF. The expansive vinothek stocks some 45,000 bottles, many local Valasian wines, that match the cuisine's high style.
